Recipe: Cocoa Nib Tuile

Cocoa Nib Tuile

Ingredients
2 ounces melted butter
2 ounces flour
2 ounces sugar
2 ounces egg white
0.5 ounce cocoa powder
2 ounces cocoa nib

Preparation
1) Preheat oven to 300°F.
2) In a medium bowl, combine the dry ingredients, except for the cocoa nib. Whisk in the melted butter and egg white.
3) On a silpat baking mat, spread the mixture out as thin as possible, making sure it’s even. Sprinkle with the cocoa nib, and bake until lightly brown. About 12 minutes.
4) Cool, then break into pieces. Reserve in an air tight container.
