Recipe: Sweet Potato Purée

Yields 6 servings
- 4 cups peeled and diced sweet potato
- 1 white onion diced
- 4 cups vegetable stock
- 2 sprigs thyme
- 1/4 pound butter
- Sauté the sweet potato and onion in the butter.
- Add the vegetable stock and thyme. Cook until potatoes are soft, about 25 minutes.
- Purée until smooth.
- Season with salt and pepper. Serve warm.
