Recipe: Vegan Pumpkin Tart
Nothing says “Fall” quite like pumpkins… and baking! Enjoy this Vegan Pumpkin Bread recipe, from our kitchen to yours.
Ingredients
- 2 1/2 cups all purpose flour
- 1 cup + 2 Tbsp. brown sugar
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. nutmeg
- 1 1/2 Tbsp. cinnamon
- 1/2 tsp. allspice
- 1/4 tsp. clove
- 15.75 oz. pumpkin
- 7.75 oz. apple sauce
- 1/4 cup vegetable or canola oil
- 1/4 cup maple syrup
- 1/4 cup water
Directions
- Preheat oven to 325.
- Spray 1 medium to large loaf pan with vegan cooking spray of choice & line bottom of pan with parchment paper, set aside.
- In large bowl combine all dry ingredients, mix to distribute evenly.
- In another bowl combine all wet ingredients & mix well.
- Add wet ingredients to dry & mix well.
- Pour into lined pan & bake until toothpick inserted in middle comes out clean. Cooking time can vary quite a bit due to the lack of eggs, type of oven used & pan used, so set your timer at 25 minutes for your 1st toothpick test & check every 10 minutes after until toothpick comes out clean.
